What do you do when a craving for something creamy and hearty like beef stroganoff hits you, and you’re allergic to dairy, lactose-intolerant, gluten-intolerant and/or you eat a paleo diet? I have an easy answer for you: you make this easy Paleo Gluten-Free Zucchini Noodle Stroganoff! This beef stroganoff re-make uses grass-fed beef or bison, zucchini noodles, mushrooms and a creamy, satisfying sauce. Bonus: it requires only one pan!
In all of my dairy-free remakes, sour cream has been one of the toughest nuts to crack. Nothing tastes exactly like it, and I don’t like the store-bought options. I’ve tried using a coconut milk plain greek yogurt as a base, but I thought it was too runny, and it didn’t hit the mark on taste as much as I had hoped. For this beef stroganoff re-make, in place of the sour cream typically used, I made a dairy-free version using coconut milk, apple cider vinegar, lemon juice and a little salt. If I were serving it on its own, I’d whip it with a free standing mixer or handheld mixer, but because it gets mixed in and disappears into this dish, whisking it is enough. If it’s a little lumpy, no worries – that will disappear as it melts and blends with the other ingredients.
Zucchini noodles can be bought ready-to-go OR you can make them super fast and easy yourself with a spiralizer. It takes no time to spin the handle and create a plate of lovely zucchini noodles! I LOVE my spiralizer – it’s easy to use and easy to clean.
This paleo gluten-free zucchini noodle stroganoff has become one of my favorite meals (it’s one of my daughter’s favs too). Lower carb meals often leave me hungry an hour or two later, but this one has more staying power. And if I want seconds? I feel no guilt in filling up my bowl again!

- 12 oz grass-fed ground beef or bison
- 3-4 zucchinis, spiralized into noodles
- 1/2 large onion, chopped
- 8 oz mushrooms (sliced)
- 3 cloves of garlic, minced
- 1/3 cup red wine (I used leftover dry red wine)
- 1 Tbsp red wine (added at the end to taste)
- 1 1/4 cup beef broth
- 3 Tbsp tapioca flour
- 1/2 cup dairy-free "sour cream"
- 1/2 tsp ground mustard
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- torn parsley (for garnish)

- Brown the meat, onions and garlic together in a large pan
- Add the mushrooms and saute for a few minutes
- Add the red wine and cook on medium-high heat for a few minutes
- Whisk the tapioca starch and beef broth together, THEN add it to the pan
- Bring to a boil, then turn it down to simmer and add the spices
- Make the "sour cream" as everything simmers in the pan, stirring occassionally
- Stir in 1/2 cup of the sour cream mixture and let simmer a few minutes (keep the remaining sour cream to add, if you'd like, to your bowls)
- Taste; add salt and pepper to taste and 1 Tbsp red wine
- Add the zucchini noodles and let it all cook together for a few minutes
- Serve and enjoy!
- 1 can of refrigerated coconut milk (full fat; not a a light version). Make sure you refrigerate for at least 5 hours ... or overnight ... so the coconut milk fat can get solid.
- Scoop only the solid part of the coconut milk into a bowl (it will all be at the top of the can).
- Add the lemon juice (fresh tastes the best), apple cider vinegar and salt; whisk together by hand.
- You need 1/2 cup of this for the recipe. There should be some left over. The amount left will vary because the amount of solid milk in each can of coconut milk varies a little. Save whatever is left to add a little to the top of your bowls ... or save for another meal.
