If you love the taste of egg rolls, but also love meals you can make in under 30 minutes, you are going to love this NEW Egg Roll Soba Noodle Bowl recipe I’ve cooked up! Bonus: it’s gluten-free and dairy-free.
I lived in Japan for a year after college, and one of my favorite food discoveries there was soba noodles. I also love egg rolls, but they take a lot of time and fuss to create. This stir fry noodle bowl recipe is an EASY, tasty mash-up of these two Asian food favorites that you can whip up in about 20 minutes!
Egg Roll Soba Noodle Bowl Ingredients:
- Two 4.48 ounce packages of Fortune Gluten-Free Soba Buckwheat Noodles, Shoyu Flavor
- Natural ground pork (or ground turkey, if you prefer)
- 1 bag of coleslaw (shredded cabbage and carrots)
- Garlic cloves
- Fresh ginger
- Scallions
- Olive oil
- Toasted sesame oil
- Soy sauce (if desired)
- Sesame seeds (optional)
There are two shortcuts that make this entree not only delicious but easy to create:
1) A bag of pre-shredded cabbage and carrots
and
2) Fortune brand Soba Buckwheat Noodles (shoyu flavor). These Fortune Gluten-Free noodles are NEW to market, shelf stable and can be found in the Asian dry grocery section in grocery stores . They’re also made in the USA and are GMO-free. You can purchase Fortune Gluten-Free Noodle products at Albertsons, Von’s, Safeway, Dierbergs Markets and Cub Foods.
I created this recipe after Fortune sent me several gluten-free noodle flavors to sample. They’re delicious on their own, but they’re also super easy to get creative with by adding vegetables and/or meat to them like I did with this new recipe.
How to Make this Stir Fry Noodle Bowl:
- Heat oil in a large skillet
- Sautee garlic, ginger and white part of scallions for 1 minute in olive oil
- Add natural ground pork and cook until no longer pink
- Meanwhile, bring a pot of water to boil
- Once boiling, add the noodles (save the flavor packets) and turn down to simmer; cook 3 to 3 1/2 minutes; drain and rinse
- While noodles are cooking, add bag of cabbage and carrots to skillet and cook down for 3-4 minutes
- Add the 2 Fortune noodle flavor packets and 1 1/2 Tbsp toasted sesame oil to skillet
- Add the cooked, drained noodles to the skillet and stir/toss well
- Garnish with the greens of the scallions and sesame seeds (plus a little soy sauce, if desired)

- 2 4.48 ounce packages Fortune Gluten-Free Soba Buckwheat Noodles, Shoyu Flavor
- 1 pound natural ground pork (or ground turkey)
- 1 16 oz. bag coleslaw (shredded cabbage and carrots)
- 2 cloves of garlic, minced
- 2 inches fresh ginger, grated
- 3 scallions/green onions
- 1 1/2 Tbsp sesame oil
- sesame seeds (for garnish)
- 1 Tbsp soy sauce (if desired, for taste)

- Mince the 2 garlic cloves, grate the 2 inches of fresh ginger and slice the green onions/scallions (separate the white and green parts)
- Heat olive oil in a large skillet on medium high
- Add minced garlic cloves, grated fresh ginger and white part of scallions to the hot oil and sauté for 1 minute
- Add the ground pork; break up with a wooden spoon and cook until the pink color of the meat is gone
- Meanwhile, fill a pot with water and bring to a boil
- Add the slaw mix (pre-shredded cabbage and carrots) and stir until cooked down (about 4 minutes)
- When your pot of water has come to a boil, reduce heat to simmer and add the soba noodles (save the flavor packets); cook the noodles for 3 to 3 1/2 minutes; drain and rinse lightly
- Add the 2 Fortune noodle flavor packets and 1 1/2 Tbsp toasted sesame oil to the skillet and stir
- Add the cooked, drained noodles to the skillet and stir/toss well
- Serve in bowls and garnish with the green slices of the scallions and sesame seeds. Add a little soy sauce if desired.
