My kids, whose Halloween trick-or-treating days came long after parents had to start checking kids’ Halloween loot, missed out on popcorn balls. I, however, did not. As a young child, I remember scoring at least one or two homemade popcorn balls each year on my doorbell-ringing quest for sugar-laden goodies. I thought they were ahhh-may-zing! I loved the crispy, sticky goodness of popcorn, butter and marshmallows. So, when I recently received a sample canister of Funky Chunky caramel corn, the idea of grownup popcorn balls came to mind. First, of course I had to sample the goods: caramel corn (made with non-GMO popcorn), cashews, pecans and almonds (oh my!). Delicious. And I love how the nuts counteract the caramel’s sweetness. It was the perfect base for these easy gourmet caramel corn popcorn balls!
Because Halloween will be here before you know it, I decided to add some festive candy to the mixture. My first thought was candy corn, but then I spotted Reese’s Pieces in the store and thought the little peanut butter treats would complement the nuts and popcorn well.
My hunch was right! These popcorn balls are decadent, but not too sweet, thanks to the nuts. They’re perfect for both kids and adults!

Ingredients

- Melt the butter and marshmallows in a pan on medium heat on the stove, stirring constantly.
- Stir in the gourmet caramel corn.
- Let cool slightly before adding the candy, so it doesn't melt. Stir.
- Grease a 9x13 baking dish
- Grease your hands (the more they're greased, the easier these are to make)
- Form the mixture into balls with your hands and place in greased baking dish. Let cool and then serve (I put them in the refrigerator for an hour)
