As I kid, I could eat a stack of pancakes and syrup without any issues. As I’ve gotten older, this combo sends my blood sugar crashing within an hour. However, if I pair pancakes with protein, I can enjoy their sweet, fluffy deliciousness without the crash. So, when I received a sample of the new Krusteaz brand protein pancakes, I was excited to try them … and I decided to up the protein even more by creating this savory BLT Protein Pancakes recipe using the mix. They’re perfect for breakfast, brunch or even dinner (breakfast for dinner has always been a favorite in our house)!
I topped the pancakes with thick bacon, spinach, tomato, an egg and a sweet balsamic drizzle. If you prefer, you can leave the egg off and/or top it with your favorite syrup.
Pancakes Packed with Protein
Krusteaz’s new Buttermilk Protein Pancake Mix is packed with 15 grams of protein per serving (even more if you make it with egg in the batter, like I do for this recipe). The mix also provides a better-for-you nutrition profile compared to any traditional pancake mixes, including:

Ingredients for BLT Protein Panckaes
- Krusteaz Buttermilk Protein Pancake Mix (or another brand if you have dairy or gluten dietary restrictions)
- Milk (or plant milk) and 2 eggs
- Thick bacon
- Lettuce, spinach or other greens of your choice
- Tomato
- Balsamic drizzle (I use the one from Trader Joe’s)
- 4 eggs (optional)
How to Make BLT Protein Pancakes
- Bake thick bacon at 400 degrees Fahrenheit in an oven for 20-25 minutes, depending on how crispy you prefer your bacon. I bake it on a rack that fits inside a cookie sheet, so the grease falls below.
- Make the pancakes according to the box’s directions
- Stack two to three pancakes, then top with lettuce/spinach, bacon and tomato
- Top with a fried egg (optional)
- Then top it all with some balsamic drizzle; you can substitute your favorite syrup, but the balsamic drizzle is sweet and complements this combo of flavors well
Expert Tips
- If you want to save some time, you can make the bacon ahead of time (otherwise, you can make the pancakes while the bacon cooks, as instructed in the recipe below)
- It’s best to top the pancake stack with half-pieces of bacon; it’s easier to get the pieces the same size and not crumble them if you cut the bacon slices in half BEFORE you bake them
- If you use thinner bacon, adjust your bake time so you don’t burn it and , and increase the number of bacon strips used for each BLT pancake stack

- 8 pieces of thick bacon
- 1 tomato, sliced
- spinach or lettuce for 4 BLT pancake stacks
- balsamic drizzle (I use Trader Joe's)

- Preheat the oven to 400 degrees fahrenheit
- Bake thick bacon at 400 degrees Fahrenheit in oven for 20-25 minutes, depending on how crispy you prefer your bacon. I bake it on a rack that fits inside a cookie sheet, so the grease falls below. TIP: cut the bacon in half with kitchen scissors before you bake it, rather than breaking it in half after it's cooked to avoid crumbling it.
- While the bacon is cooking, mix and make your pancakes. Heat electric griddle to 375 degrees and lightly oil it. Mix 2 cups mix with 1 1/3 cups of preferred milk and 2 eggs (stir well, but don't over-blend).
- Drop pancake batter onto griddle, dividing the batter evenly to make 12 pancakes, if you want to stack 3 as shown in the photos above.
- Cook for about 2 1/2 minutes on each side -- the protein pancakes won't bubble, so check to make sure you aren't overcooking them.
- Slice your tomatoes and fry 4 eggs.
- Stack 3 pancakes, then place lettuce or spinach on top, 2 pieces of bacon (4 halves), tomato and egg (optional), then top with balsamic drizzle.
