These zucchini tots are among my all-time favorite snack food ... and they're healthy! :) You can use a dairy-free "cheese" and dairy-free bread crumbs to make these non-dairy. You can also easily make them gluten-free by using gluten-free bread crumbs! For the Love of Zucchini I LOVE zucchini, so when I saw a zucchini tots recipe (and then another) show up in my facebook feed several months ago, I knew I had to give zucchini tots a try. As usual, I look at recipes as suggestions ... so I ... continue reading...

Swiss Chicken Casserole (Dairy-Free)
I love creamy, cheesy casserole dishes ... but I had to give them up 20 years ago when I developed an allergy to cow's milk (I'm not lactose-intolerant, but allergic). UNTIL I found dairy-free "cheese" products, almond and coconut milk products and experimented with substituting them in recipes. I adapted this recipe from a Swiss Chicken Crepes recipe I found in the December 2012 issue of Southern Living. It calls for 3 cups of half-and half and plenty of Swiss cheese, plus wrapping the ... continue reading...
Avocado Loaf Bread
Meet your new favorite bread: avocado loaf bread! It's easy to make in a bread machine and makes the ultimate avocado toast! Or BLTs, butter and bread, bread and jam. I use the dough program on my trusty bread machine my maternal grandmother gave me 20-some years ago to do the heavy lifting and bake it in a loaf pan in the oven. Bonus: it's dairy-free! This avocado bread recipe is simple and delicious, replacing the oil in most bread recipes with fresh, mashed avocado. It also uses the ... continue reading...
Homemade Turkey Meatballs
These homemade turkey meatballs are among my favorite meatballs ever. The can be eaten by themselves, used to make a meatball sandwich or paired with spaghetti and marinara sauce. Homemade french bread also pairs perfectly with them! I like to make a large batch, so we can eat the leftovers for a few days or freeze half for another week or for when we have guests staying with us. If you want to make smaller batch, you can cut the recipe below in half. INGREDIENTS Meatball ... continue reading...
Gluten-Free Dairy-Free Berry Tart
Summertime berries are the best. They're even better in an easy gluten-free dairy-free berry tart! Years ago, when I faced the need to create a gluten-free dessert, I concocted this recipe for a friend's child after I invited her family to join us for Thanksgiving dinner. I enjoyed it as much as her son did, and it's now among my favorite desserts. Even those without any kind of gluten-intolerance love it. Another child, with no food issues, at a holiday gathering a year later, shyly ... continue reading...
The Independent Bar & Kitchen in Dallas
I had heard a lot about The Independent Bar & Kitchen in Dallas, a restaurant in Deep Ellum that's described as European comfort food, so I was happy to stop in on a beautiful Sunday afternoon. We were greeted by a friendly host and sat in a booth with the windows open nearby. For an appetizer, we ordered the Root Beer Pretzel Bread. It came with 3 dipping sauces - piccalilli, welsh rarebit and spicy mustard. If you've ever had warm pretzel bites, these are similar, but larger and ... continue reading...
Adobe Verde in Gruene, Texas
Earlier this month, we visited Adobe Verde, located just off the Guadalupe River in historic Gruene, Texas. The weather was perfect, so we sat on the patio. The chips and salsa were a little bland, but we didn't care -- between the weather, the live music and the delicious pitcher of margaritas, we were happy! My daughter, who attends Texas State University, joined us. She ordered the Sizzling Veggie Skillet, with shrimp added. She said the vegetables and shrimp were delicious and ... continue reading...
Crowd-Pleasing BBQ Cups
Sloppy joes meet biscuits (and cheese, if you can) in these kid-friendly, crowd-pleasing BBQ cups, a favorite that my ex grew up with. A special shout out to his mom, Myra, for the ingredient list and making them for us the first time I met her. Like me (and my mom), she has made her kids' favorites so many times, that she just whips them together without measuring. So, I didn't get an exact recipe and have had to develop this ... but still, you can adjust to your tastes as noted ... continue reading...

I'm not a big fan of boxed cake mixes. I like knowing exactly what's in my cakes or cupcakes, and with a recipe THIS simple and delicious, onceĀ you make these simple homemade white cupcakes (dairy-free), you'll never need a boxed mix again. The recipe is dairy-free, but if you orĀ your family or guests don't have issues with dairy, you can easily substitute the vegan butter for real butter and the almond milk for real milk. Ingredients: 1 cup white sugar 1/2 cup vegan butter to make ... continue reading...
Rodeo Goat Dallas
In the mood for a good burger in Dallas? Put Rodeo Goat Dallas on your list. On my first of several trips to Rodeo Goat (in 2016), I was quickly hooked. I had the best server I've had in a long time -- Nandy. My friend had the Royal With Cheese and paired it with a Revolver Sidewinder. I had the Telluride Burger paired with a Real Ale Fireman (special thanks to Nandy for letting me taste test a couple brews). While we waited for our meals, we went outside and played the ring on a ... continue reading...
