This Chicken and Shrimp Jambalaya is another favorite in our household. My version is a little on the lighter, lower-carb side as far as jambalaya recipes go, going heavier on vegetables, chicken and shrimp and lighter on rice than most, with no sausage (although you can add some if you prefer) and using chicken breast meat instead of thigh meat. It is a hot, comforting, spicy bowl of all things good in this world. :) This jambalaya recipe makes a fairly large pot, which is perfect for large ... continue reading...
Dairy-Free Pie Crust
When I first became diagnosed with a cow's milk allergy 20+ years ago, the only readily available options to replace real butter in my baking recipes were margarine and shortening. Unfortunately, both were made with partially or fully hydrogenated oils. Luckily, many healthier options are now available to make a dairy-free pie crust, including Earth Balance vegan baking sticks, non-hydrogenated shortening and coconut oil for baking. I have tested all of the above in pie crusts and like ... continue reading...
Dairy-Free Soy-Free Pumpkin Pie
Have a dairy allergy? Soy allergy? Lactose-intolerance? Family member and/or holiday guest who does? This dairy-free soy-free pumpkin pie is the stuff holiday dessert dreams are made of ... and no one will know that it is "free" of anything! Twenty-plus years ago, when an allergy prick test revealed the cause of all my misery (a 6-month sinus infection that wouldn't let go, migraines and chronic sinus problems that had been ongoing for years), I sat in the examining room and cried. ... continue reading...
Potato Kale Sausage Soup
This is an updated version of one of the first recipes on the Kitchen Gone Rogue blog. It's a fast, easy, nutritious and oh-so-flavorful Potato Kale Sausage Soup. It's also dairy-free and, as long as you use a gluten-free sausage, it's a gluten-free soup too. You can use whichever sausage you prefer -- from vegan to an organic, nitrate-free, gluten-free chicken bell pepper sausage (like the one pictured below, made by Bilinksi's) to your favorite turkey, beef or pork sausage. This is one of my ... continue reading...
Pan Seared Pork Chops with Mojo Sauce
Have you ever made a sauce that you could just drink buckets of? That's how much I love THIS mojo sauce. It's relatively fast and easy to make. And it tastes WAY better than anything out of a bottle! These pan seared pork chops with mojo sauce are my favorite. Seriously. I was so happy I made enough for leftovers ... and that no one was around the next day to watch me inhale my lunch (or make me share). The sauce also tastes delicious on chicken, beef, fish, veggies or, if you prefer, straight ... continue reading...
