The cutest little Easter desserts, these Rice Krispy Easter Nests use puffed rice cereal and melted marshmallows to create the "nests" plus candied "grass" and "eggs" to fill it. So fun to make, and it's easy for the kids to help.
On your stovetop, gently melt the dairy-free butter in a large pot on low heat, then add in the marshmallows and continue to stir until blended well and the marshmallows melt.
Turn off the heat, add the cereal and stir well.
Using a greased large spoon or greased 1/3 measuring cup, scoop the mixture out and into your muffin pan, dividing between 18 or so cups.
Using a spoon or 1 Tbsp measuring spoon, press the treats down in the center to create the "nests"
Let them cool in the muffin pan (about 30 minutes or more).
Decorate the Nests
Once cool, pull out of the muffin cups.
First, cut the candy grass and arrange in the bottom of the "nest."
Add 5 or so jelly beans (or another preferred candy) on top of the grass.
Plate and enjoy!
Notes
Make sure you spray the muffin pan plus any utensils you use with nonstick cooking oil spray, so the "batter" is easier to work with and doesn't get stuck to these.Use fresh ingredients.
