‘Tis the season for all things apple, including apple crisps, apple pie AND apple cookies! This new recipe for vegan chewy apple oatmeal cookies may be my new favorite cookie. And that’s not easy for me to say, because I LOVE cookies. They are my weakness, and I plead the fifth on how many I ate tonight! Dairy-free, egg-free and made with 1 cup of fresh diced apple, melted vegan butter, oatmeal, sugar, spices and a secret ingredient, these apple oatmeal cookies may become YOUR new favorite too.
If you’re tempted to skip the secret ingredient in this recipe (mashed banana), don’t. It acts in the place of an egg. It also lends a little of the sweetness to the cookies and helps make them chewy. Another element in this recipe that makes the cookies so chewy (and makes them super easy to mix together by hand) is that you melt the butter/vegan butter before mixing the ingredients.
As far as cookies go, these are on the healthier side (giving a nod to oatmeal, banana and apples), so you don’t even have to feel guilty when you indulge in a couple … or a few … or more (like I did). 🙂
There’s nothing better than a fresh, chewy, warm cookie right out of the oven … except, perhaps, for a cookie that is still chewy the next day!

- 1/2 cup melted vegan butter (or regular if you prefer)
- 1/4 cup mashed banana
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 tsp pure vanilla extract
- 1 cup all purpose flour
- 1 1/2 cups instant oats
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 pinches of cloves
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1 cup peeled, diced apple (I used 1 Granny Smith apple))

- Preheat oven to 350 degrees F
- Melt the 1/2 cup butter
- Whisk together the melted butter, sugars, vanilla and mashed banana (as an egg substitute)
- Add the flour, spices and baking soda; mix well
- Add the diced apple and mix well
- Form 1 inch balls of dough and drop on cookie sheets covered in parchment paper; flatten slightly
- Bake on 350 for 10-12 minutes
