What Cocktail Can I Make with Pineapple Juice?
I can take or leave pineapple, so I was surprised when I was WOWED by a cocktail at an event a while back that featured pineapple juice in it. I asked the waiter how it was made, and all he could (or would) tell me was that it had pineapple juice, tequila and some spice. So, it’s basically a spicy pineapple margarita!!!
Well … I’ve been craving that sweet and spicy concoction ever since, and I finally decided to play cocktail maker in my kitchen to try to recreate it. After a little trial and error, my taste buds were singing a little tune called: yep, yep, this is IT — cheers!
Sweet and spicy go together like peanut butter and jelly, chips and salsa and …well … coffee and anything.
Sweet Hot Mama Cocktail — Not Just for the Mamas
Years ago, at a Peruvian restaurant in Portland, Oregon, I had another sweet/spicy combo drink. I didn’t ask what was in it (shame on my younger self), but I do remember that it had a fun name — something like Hot Damn Mama. So I thought Sweet Hot Mama was a good name for this one, but it is NOT just for the mamas! My brutally honest pickiest taste tester asked for a second one …
A Spicy Pineapple Margarita
This spicy pineapple margarita has the perfect blend of spicy and sweet with a little fizz. Nirvana in my book! But don’t worry, it isn’t TOO spicy (although you can add extra spice if you prefer). My theory with most spices or condiments is that it’s easier to add than to take away. So start with a few drops of hot sauce … you can always add more. 4-5 drops was the sweet spot for me and my taste testers.
PRO TIP: drops of hot sauce don’t typically come out evenly, so drop it into your shot glass or a little bowl and then add it to your drink, just in case it comes pouring out (learned that one the hard way … more than once).

- 1/2 cup pineapple juice
- 1/4 cup seltzer water of your choice
- 1 shot sweet and sour mix
- 1 shot tequila
- 4-5 drops hot sauce (I use Louisiana hot sauce)
- 1 slice jalapeno
- 1 wedge pineapple (for garnish)
- a little sugar (for rim of glass)
Ingredients

- Mix all of the ingredients (except jalapeno, pineapple and sugar) and shake well with ice (I like to use a protein shake mixer)
- Pour a little water onto one plate and a little sugar onto another
- Dip the rim of your glass in the water and twirl around a little; next, do the same with the sugar
- Add ice to the glass then pour in the mixed liquid.
- Garish with a fresh pineapple wedge on the rim of the glass and a slice of jalapeño in the drink. Enjoy!
