This oven roasted cherry tomatoes recipe is my favorite, easiest and laziest way to use cherry tomatoes.
You just coat a pan or heavy skillet with some olive oil, throw in some cherry tomatoes and add some sliced onions (optional), a few cloves of garlic and a pinch of salt. Then let them roast for 30 minutes while you lounge about or prepare something else for dinner.
What Can I Make With Roasted Tomatoes?
I love to serve these with my turkey chorizo meatballs.
They’re also delicious on top of pizza, with hash browns and eggs for breakfast or simply on top of a lovely piece of sliced bread, like my homemade French bread.
Ingredients for Roasted Tomatoes:
- Cherry tomatoes
- Onion (optional)
- Garlic cloves
- Pinch of salt
- Olive oil
Blistered Tomato Instructions:
- Coat a pan or heavy skillet with olive oil
- Toss in a pint or more of cherry tomatoes
- Add some sliced onions (optional), a few cloves of garlic and a pinch of salt.
- Roast for 30 minutes at 400 degrees

Ingredients

- Preheat oven to 400 degrees F
- Slice half an onion
- Slice 3 cloves of garlic
- Wash and dry cherry tomatoes
- Toss the tomatoes, onion, garlic and pinch of salt in 2 Tbsp olive oil and spread into one layer in skillet
- Roast for 30 minutes and enjoy!
