Dairy-Free Lemon Raspberry Puffs
A light, beautiful dessert that’s refreshing and delicious, these Dairy-Free Lemon Raspberry Puffs will become a family or party favorite for sure!

Instructions
  1. Make the lemon curd and cool (or use lemon curd from a jar)
  2. Thaw the puff pastry in refrigerator (cold but not frozen is better than room temperature)
  3. Preheat oven to 400 degrees F
  4. Cut the puff pastry sheet into 12 squares and place onto cookie sheet lined with parchment paper
  5. Melt the butter/vegan “butter” and brush on top of the puff pastry squares
  6. Bake at 400 degrees F for 13-15 minutes (14 was perfect in my oven); be careful to not let them burn
  7. Let cool
  8. Spread lemon curd on top of each and top with one or more raspberries (reserve the other raspberries to serve on the side with the puffs)
  9. Dust with powdered sugar and enjoy!
