Ingredients
1
cup
freshly brewed coffee (I use a dark roast)
3/4
cup
granulated sugar
1/4
cup
canola oil
1
egg
1
tsp
pure vanilla extract
2
cups
all-purpose unbleached flour
2
tsp
baking powder
1/2
tsp
baking soda
1/2
tsp
fine sea salt
1
cup
your favorite chocolate chips (I use dark choc chips)
2
Tbsp
roasted cocoa nibs
extra sugar to sprinkle on top
Instructions
Preheat oven to 375 degrees F
Lightly grease a 12-muffin tin
Mix all of the wet ingredients in a large bowl
Mix all of the dry ingredients in a separate bowl
Add the dry ingredients to the bowl and whisk by hand until everything is blended well
Fill each muffin tin cup about 2/3 full
(optional) Sprinkle a pinch or two of coarse or regular sugar on top of each muffin
Bake for 13-15 minutes
Let cool until no longer hot … and enjoy! (these are delicious warm out of the oven, but also great the next day!)
