One of my favorite things to do is spend time with my daughter. She’s in her junior year at college, several hours away from me, so between her full-time course load, part-time job, her own business (shout out to Indigo Peaces), her friends, her boyfriend and the distance between us, I don’t get a lot of time with her. So I savor our hours together! During her most recent visit home, we created and perfected this recipe for Chocolate Chip Mocha Muffins together.
These chocolate chip mocha muffins are the perfect morning muffin, afternoon pick-me-up, road trip snack and (as I type this) an extra boost to get you through the week after we lose an hour each spring. Hey – I’m not yawning, you’re yawning! LOL!
If you need or want to avoid milk, these muffins are easy to make dairy-free. The recipe uses oil, not butter, and no milk, buttermilk or cream cheese. You just have to use dairy-free chocolate chips, like those from Enjoy Life or Pascha, rather than regular chocolate chips to make them 100% dairy-free. Dairy-free chocolate chips can be more difficult to find – and are typically pricier – but they’re delicious, use good ingredients and are a welcome treat when you have a dairy allergy or lactose intolerance. If you don’t need to avoid dairy, I suggest using your favorite semi-sweet or dark chocolate chips for these (which aren’t loaded with dairy, but typically do have some milk in them).
Caffeine-Infused Chocolate Chip Mocha Muffins
My daugher’s spring break road trip was the inspiration for these caffeine-infused babies! Mama didn’t want any drivers falling asleep at the wheel during their 2-vehicle trek from Dallas to Gulf Shores, Alabama. So these are not only loaded with chocolate chips, but also with fully-leaded coffee and … roasted cocoa nibs. A caffeine triple-threat!
At this point, you may be asking: what the heck are cocoa nibs? Cocoa nibs are bits of fermented, dried, roasted and crushed cacoa bean. In other words: they’re chocolate that hasn’t been ground and mixed with sugar yet. Cocoa nibs are considered a “super food.” Like cocoa powder, if you’ve ever tried it by itself, they aren’t super tasty alone, but they are delicious when mixed into something like a cookie or a muffin, and they have a nutty texture. You can find them at most grocery stores these days. I typically use Trader Joe’s Roasted Cocoa Nibs, but any brand will work.
Did my caffeine-laden plan work? Well, they all made it there safely. PHEW! And my daughter texted to tell me that they all loved the muffins. I just wish I had sent enough with them for the drive home …

- 1 cup freshly brewed coffee (I use a dark roast)
- 3/4 cup granulated sugar
- 1/4 cup canola oil
- 1 egg
- 1 tsp pure vanilla extract
- 2 cups all-purpose unbleached flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp fine sea salt
- 1 cup your favorite chocolate chips (I use dark choc chips)
- 2 Tbsp roasted cocoa nibs
- extra sugar to sprinkle on top
Ingredients

- Preheat oven to 375 degrees F
- Lightly grease a 12-muffin tin
- Mix all of the wet ingredients in a large bowl
- Mix all of the dry ingredients in a separate bowl
- Add the dry ingredients to the bowl and whisk by hand until everything is blended well
- Fill each muffin tin cup about 2/3 full
- (optional) Sprinkle a pinch or two of coarse or regular sugar on top of each muffin
- Bake for 13-15 minutes
- Let cool until no longer hot ... and enjoy! (these are delicious warm out of the oven, but also great the next day!)

Thanks, Heather! We were going to make these banana chocolate chip mocha muffins … but we were out of bananas! I think subbing the 1 egg with banana or applesauce would work. I will try it next time. 🙂
