My ex is the Bubba Gump of cherries. And these cherry lime cookies were his favorite anything cherry. Don’t be sad because it’s over; be happy because he inspired this recipe – LOL!
Cherry Pie Lovers Will Inhale These Cherry Lime Cookies
If I’m in the cherry fan club (I am), then my ex was the founder and president. Seriously, I have never met a person who loves cherries so much. Preferably cherry pie filling — on or in anything. I could probably have boiled a piece of chicken, dumped cherry pie filling on top, and he would have inhaled it. Although definitely not with the same kind of enthusiasm he exhibited with these cherry lime cookies.
When I created this recipe, I played with just how much the lime flavor should (or shouldn’t) stand out. My favorite version is the recipe below, which blends a flaky vegan sugar cookie with sweet cherries and a subtle hint of lime flavor.
Ideally, you’d put a few less cherries inside of each cookie than I have pictured here. You have to be careful not to get the cookie too thin in the “well,” which weighs the cookie down too much when filled with cherries and makes the cookie break easily. I kind of loaded mine down knowing exactly who would be gobbling them all up in the pictures below. 😉 Three cherries inside each cookie might be more ideal than the 4-5 I used.
I use an electric hand mixer to whip up the dough quickly, although they can most definitely be mixed by hand. To form the cookies, just roll the dough into balls and gently flatten them, then form “wells” for the cherries. If you just want to put a cherry or two in the middle, like a thumbprint cookie, you can use your thumb or the back of a spoon. I used my fingers to make a fairly wide area so I could fill each with 4 or more cherries.

- 1 cup vegan butter
- 1 cup granulated sugar
- 4 tsp fresh lime juice
- 4 tsp fresh lime zest
- 2 1/2 cups flour
- 1/2 tsp sea salt
- 2 Tbsp almond milk (unsweetened original)
- 1 can cherry pie filling
Ingredients

- Preheat oven to 350 degrees F
- Line cookie sheet with parchment paper
- Cream the butter, sugar, lime juice and lime zest
- Add the flour, salt and almond milk; mix well.
- Form into approximately 1 1/2 inch balls, place each on cookie sheet, then flatten
- Form a "well" in the center of each cookie, being careful not to get the center too thin.
- Using a spoon, drop cherries into the "well" of each cookie
- Bake 15-17 minutes
- Let cool and enjoy!
