Sloppy joes meet biscuits (and cheese, if you can) in these kid-friendly, crowd-pleasing BBQ cups, a favorite that my ex grew up with. A special shout out to his mom, Myra, for the ingredient list and making them for us the first time I met her. Like me (and my mom), she has made her kids’ favorites so many times, that she just whips them together without measuring. So, I didn’t get an exact recipe and have had to develop this … but still, you can adjust to your tastes as noted below.
These are relatively easy to make – and kids (and grownups) LOVE them! The bulk of the work comes from rolling out the biscuit dough to flatten them, although it’s easier than making dough from scratch. I like to double or triple the meat mixture and freeze it in batches for later. That way, I just have to thaw the meat, flatten the biscuits and bake (quick and easy). Of course, I leave off the cheese on mine (after 20+ years of being allergic to dairy, I think they’re amazing without the cheese). Another option if you have dairy issues is to use a dairy-free cheese.
I like to pair these with some healthy sides, like roasted sweet potatoes and/or asparagus or steamed broccoli.
Ingredients:
- 1 lb ground beef or ground turkey
- Refrigerated biscuit dough (1 for 1 lb of meat)
- 1/3 – 1/2 cup ketchup (per your tastes … I love ketchup so use 1/2 cup)
- 1/2 tsp mustard
- 1 1/2 Tbsp – 2 Tbsp brown sugar (again, start with the smaller amount and add, per your taste; again, I like it sweeter so use 2Tbsp)
- 3/4 tsp garlic powder
- 1/2 tsp pepper
- Cooking spray
- Flour
- Dairy-free or regular cheese (whatever sliced cheese you prefer)
- (you can add fresh, chopped onions)
You Also Need:
- Large muffin pan(s), preferably (you can use regular-sized muffin pan, but the large 6-muffin pans work better and what is shown in the photos)
- Rolling pin
Instructions:
- Preheat oven to temp as instructed on biscuit package (usually 375 degrees F)
- Brown the meat (if you want onions, add chopped onions)
- Add ketchup (I use a lot…depends on how much you love ketchup…start with 1/3 cup and taste…add as you like; I use 1/2 cup)
- Add brown sugar (same here… I use quite a bit…start with 1 1/2 Tbsp … I use 2 Tbsp)
- Add mustard, garlic powder and pepper
- Open refrigerated biscuits
- Spread a little flour on flat surface; place biscuit on top and then flip; use rolling pin to flatten biscuit to about the size of a corn tortilla or larger
- Place flattened biscuit inside muffin pan, then fill with meat
- Repeat until you have run out of biscuits or meat
- Add whatever cheese you prefer to the top (optional)
- Bake in oven for lowest amount of time shown on biscuit package (usually 10-11 minutes…watch them; depends on your oven)
- Plate and ENJOY!
